Happy Valentine's Day

We definitely didn't have the most exciting Valentines day. In fact, Eric has been sick all weekend so he didn't get the chance to do much. I thought that I would do something for my boys to show them how much I love them. So I spent a couple of hours in the kitchen making Eric his favorite dessert, cherry cheesecake, and I made Aaron heart shaped sugar cookies. I think they both enjoyed them.
Aaron couldn't wait to get his hands on those cookies.

Our ward had really nice dinner/dance date planned with a nursery provided. However, Aaron still isn't a big fan of nursery so as soon as we left him in there he started to cry bloody murder. So they brought him back to us. :( He was all over the place and was in a bad mood. When we finished eating our dinner, Eric asked me to dance and of course Aaron wasn't happy about being excluded so he joined in with us. How romantic? Dinner and dancing with your toddler demanding attention. I think we were the first ones to leave since Eric was still feeling sick and Aaron was so ready for bed.
Hopefully when Eric feels better we will get a babysitter and have a date without him. :)

What's for dinner?

I am trying to put together a menu for dinner for the next two weeks. I swear we have been eating the same old stuff every two weeks for the last 5 years and I am ready to try something different. It is no secret that I am not a good cook. I have a really hard time going through a cookbook to find new recipes because they are always too advanced for me. They either take too much time or require ingredients I have never heard of. So I thought I would ask you, the every day mom, what do you like to make for dinner. Please let me know what some of your favorites meals to cook for you families that are somewhat quick and easy. I would love to have new recipes that normal people actually cook.

6 years ago today...

Six years ago today is when I met the love of my life for the first time. It was also our first date since we met on a blind date. Since our first date was on Feb. 1st and our engagement was on Sept. 1st it is pretty easy to remember these dates.
Six years ago my friend Kristin set me up with her boyfriends old roommate, Eric Bell. Eric's old roommate had to convince him to go on this blind date. Eric had been home from his mission for 7 months and had only been on one other date that was also a blind date and it went really bad. He decided to go because his old roommate told him that I was hot.
So Kristin and I went to meet the boys for our double date at their apartment. It is funny to talk about our first impressions of each other. When I first met Eric I had the thought, "nope, he's not the one for me" and his thought of me was "oh, crap." I guess he thought I was a little out of his league. We started the date out with bowling on campus. I am not a good bowler but I enjoy the game. Then we went to hollywood video to get a movie. Kristin and her boyfriend ran in while Eric and I sat in the car and talked. He was surprised to learn that I was a senior and very close to graduation. We then headed back to Eric's apartment to watch "The Bourne Identity". When that movie was over they were ready to put in another movie but I don't think that 2 movies on a first date is a good idea plus I was starving. So I suggested we go get something to eat. So they took us to Wendy's for a cheap dinner. We still had another hour before curfew so we decided to go out to a park to hang out. Eric pushed me on the swing as it started to snow with big white flakes. We sat on the swings for a while talking while the other couple took off into the dark somewhere. By then it was time to go home. It was a good date. I'll admit that we didn't fall in love or anything that first date but we both went home thinking that we would like to go out again. We did go out again the next weekend and the next after that. However it wasn't until mid march we held hands and until mid april we kissed. :)
We dated through the rest of the semester. At the end of the semester we were no where close to getting engaged but we also knew that we didn't want to break up. So we dated long distance through the summer and at the end of the summer we were engaged and the end of the year we were married.
